How to make Orange and Honey cake! (Video)

  

 

Today we're going to be showing you how to make our dreamy orange and honey cake.

So for the recipe you will need:

  • two whole oranges (weighing around 200g each)

  • 6 eggs

  • 175g of honey

  • 200g of ground almonds

  • 120g of flour

  • one teaspoon of baking powder

  • a pinch of salt

  • one teaspoon of vanilla essence

So first things first, you want a medium sized pan and place your two whole oranges in it.

Then you want to cover the oranges with water and put the pan on a hob over a medium heat.

Once boiling reduce to a simmer and cook for one to two hours or until completely soft. Once cooled take the oranges out of the water and slice them up and check for any large pieces that you want to remove. Put these into a food processor and give them a good blitz until smooth and yes you do want to pop the whole orange in there.

Once that's done and everything is smooth you want to add in the rest of your wet ingredients starting with your 6 eggs followed by 175g of honey.

Honey is a great alternative sweetener in your cakes and you can actually use less of it than caster sugar so reducing the sugar content of your creations without compromising on flavour.

Then we want to add in the spoon a vanilla essence which is going to get some great flavour and then we're going to mix that until smooth.

Now put that wet mixture to the side and take out a large bowl and into that large bowl will go the flour or you could use something like chickpea flour if you wanted to make a gluten free. Then you want to add in your ground almonds and next the baking powder. Finally a pinch of salt.

Then you want to add your wet mixture from earlier to your dry mixture and give it a good whisk. If you want to save time and you can actually add everything into your food processor and mix until smooth.

Then with a pre lined baking tin which is 8 inches wide, just pop all of that lovely cake mixture into your tin and pop it in the oven for around 60 to 70 minutes. When using honey we suggest cooking it low and slow, so putting some tin foil over the top of your cake around halfway through will help to stop the top from burning.

When your cake finishes cooking and it's nice and golden on top, turn your cake onto a cooling rack and leave to cool.

Once cool we're ready to decorate. We drizzled over some more honey with some lovely orange zest and there you have it a dreamy honey and orange cake!

  • Hi I am just into my second tub of the Original honey….I have a teaspoon of it in my porridge every morning….I was a bit cautious at first because I am a Type 11 diabetic…but i needn’t have worried because it doesn’t seem to affect my blood sugars so I am very happy to have it on my toast as well…with caution !!…Thank you
